Flammkuchen with green asparagus and goat cheese
Flammkuchen is delicious for any occasion, whether as lunch, appetiser or supper. This version is perfectly in tune with the season with the addition of crunchy green asparagus. Together with the crème fraîche, creamy Bettine goat cheese and savoury bacon herbs, it forms a real spring dish.

Ingredients
for 4 people125 g | bacon strips |
300 g | (thin) green asparagus |
1 | roll of flammkuchen dough (chilled) |
125 g | crème fraîche |
100 g | Bettine Pearls |
1 | lemon |
Preparation

- Preheat the oven to 200°C Heat a frying pan without oil or butter and fry the bacon strips until crispy, about 5 min. Drain on kitchen paper.
- Meanwhile, cut the hard bottom of the asparagus.
- Roll out the flammkuchen dough on a baking tray. Spread the crème fraîche on top. Place the asparagus on top along with the bacon.
- Bake in the middle of the preheated oven for about 15 min until golden brown and cooked. Garnish with the goat cheese pearls and lemon zest.
